It’s that time of year when the temperatures start to rise and Mother Nature starts to hint at turning up the heat. All I need is the slightest suggestion and I am on board and ready to roll with summertime fun! In honor of the lengthy stay-cation on the horizon, I am rolling out the red carpet for my favorite time of year with a few summery sweet treats. What say you, are you tired of this never ending winter too? Let’s revolt…
First on our list of devious ways to usher in the season of warmth – a summertime inspired sunset shaved ice recipe!
It is tricky to keep your shaved ice from turning into a slushy, on a very warm day. The steps below should help quite a bit.
RECIPE / If you are making snow cones for kids or popsicles using flavored syrup – you can also use a combination of Cotton Candy, Pina Colada, and Cherry syrups. The cotton candy and pina colada flavors will be combined in equal amounts with just a few drops of cherry.
- Shaved Ice Machine
- Ice Cube Molds or Trays
- 2 cups Raspberry Juice or Mix
- 2 cups Pineapple Juice
- 2 Tbsp Coconut Extract or Creamed Coconut
- 1 cup of Spiced Rum – to make this an adult beverage
Mix liquids and coconut and blend in a blender until all ingredients are well mixed and thinned. Pour into a freezer safe container and let freeze until solid. A few smaller containers, or several ice cube trays that you can empty a little at a time, will work best. By freezing the juices to use as the ice, you will save yourself from having the liquid juice melt your shaved ice. Add only enough juicy ice cubes or frozen chunks as will work for the shaved ice machine and let the remainder stay in the freezer.
Follow the directions on your shaved ice machine, pour into a glass or coupe and enjoy!
